Kimchi is a well-known Korean side dish. I always wonder why Korean people are so fond of this dish and consume it almost everyday. Armed with this easy recipe, you can make kimchi at home. It's not that difficult as you thought.

Once I tried kimchi, I just fell in love with its complex flavours. Taste-wise, it’s spicy, salty and sour, mingled with a pinch of sweetness and umami. It gives you a cleansing feel. So it’s very suitable for being served as an appetizer.

Kimchi is tasty and healthy. I made some to fill up a whole bucket the other day. Then I can take some out as an appetizer for my daily meal. It’s very handy. Well, sometimes you want something different like me. How about making some dumplings with these delicious kimchi? I made some more uncooked dumplings and store in freezer just in case I crave for some during breakfast, lunch or even afternoon tea. If you have more time, do try making your own dumpling wrappers. It'll take your dumplings up a lever for sure.

I reckon Japanese udon is the best light meal for my family through out the year. It’s quick to whip it up in the last minute. By stir-frying the noodles with teriyaki sauce, it’s heavenly tasty.

My family loves udon very much. So I’d keep a packet of frozen udon in the freezer. Simply blanch the noodles in boiling water for a short while. It’d be perfect for stir frying. What you need is to add some meat and seasonal vegetables.

Making fried rice is a good way to use up any leftover vegetables or meats in fridge. It can be whipped up within half an hour. Then you can enjoy a well-balanced meal.

I often use pork or chicken meat to make fry rice. This time I tried with turkey mince that I happened to spot the special offer at a nearby supermarket. After trying, I decided to post this recipe to share with you all. I highly recommend to use turkey mince if you have a chance to get any.

Turkey meat contains higher protein with less fat. The meat texture is very soft, absolutely good for stir frying with rice. I also popped in some Kimchi and several prawns. Voila, a humble fried rice dish was turned out to be a very nourishing and flavoursome one.

This classic Malaysian dessert, Bubur Cha Cha is always a hit in our gatherings. The aroma of pandan leaves and coconut cream will get you hooked. I like putting all kinds of sweet potatoes, together with black-eyed beans. The translucent tapioca pearls add an interesting texture in the coconut soup. This dessert can be served as hot or cold.

What I like the most about this traditional Malaysian dessert is its colourful presentation. Needless to mention that its taste is wonderfully good because it’s made with fragrant sweet coconut soup, delicious sweet potatoes and tapioca pearls (sago pearls).

This dessert is so popular around the world and many new variations have been created. Some Malaysians like to add bananas and black-eyed beans into this dessert as well. It can be served hot or cold. I prefer to enjoy when it’s still warm.

The Tom Yum soup base is very crucial and it’s the soul of the whole dish. The soup tastes hot and sour with lots of fragrant spices and herbs. You can add any meat or vegetables you like in the soup.

Whole Tomato Rice

This one-pot whole tomato rice dish has been so epic and crazily circulated around on the internet. As I grew up with one-pot rice and often made this kind of rice for my family, like Shiitake mushrooms and chicken rice. Often times, I cook tomato dishes for my family.

It shouldn't surprise me at all. What intrigued me is that a whole tomato is going to be placed in a rice cooker (or a pot) to make a meal. Even better, you can make your own creative versions with many extra vegetables or meats you like.

Here's my version, I added some Edamame beans (immature soybeans in the pod) that you might have tasted at sushi bars and found in the Taiwanese and Japanese cuisines. These little beans are flavoursome and rich in protein and plant sterols.

These Teriyaki chicken patties are so moist and tender. It can be served as a light meal, sided with some vegetables or snack.

I wouldn’t have known how nice the taste of tofu and chicken with teriyaki sauce going so well if I hadn’t run the experiment.

All of three components are blended nicely and tightly in this dish. The key ingredient to make these chicken patties tremendously moist and tender is the humble tofu, a healthy food that I often use in my cooking.

Fried Hokkien Noodles (福建炒麵)

As a famous Chinese food critic 蔡瀾 stated on his blog, the original version of Hokkien Noodles is hardly found in Fujian (福建) province, China nowadays. The dish has become a fusion styled, deep black in colour served in many modern Malaysian restaurants. The underlined meaning of his post is that the original version of Hokkien Noodles was not as black as we see in today’s restaurants. Yet people are still arguing about the way how this noodle dish should be cooked.

This is my take on the traditional fried Hokkien noodle dish replicated to the nearby Chinese restaurant, got thumbs up from my family.

Well, as a home cook, I can take the advantage of modifying and twisting the cooking way as I want. If you like darker noodles, put more dark soy sauce into the sauce then. When it comes to cooking Hokkien noodles, the very basic thing is quite simple.

This Singapore chilli prawn dish is one of my favourite seafood dishes. The prawns are succulent and taste so wonderfully good with the home-made delicious sweet chilli sauce. This dish is really quick and easy to make.

It tastes salty, sweet and sour with a hint of hotness. No worries, the hotness is very mild. My family found it’s just right. Having said that, you can adjust the amount of red chillies and ginger according to your preference.

This baked coconut sticky rice cake (aka baked Chinese New Year cake) is absolutely tasty. It's a no-brainer recipe. You won't go wrong if you try. I often bake this coconut sticky rice cake for Chinese New Year celebration recently.

As Chinese New Year is coming around the corner, my daughter begins to ask me what I’m going to cook to celebrate. The first thing came up in my mind was this baked Coconut Pudding.

My dear friend, Vivian who came from Malaysia baked one to share with us some time ago. I was impressed because it was so delicious. Vivian told us that her family would bake this coconut pudding to celebrate Chinese New Year in Malaysia.

During Chinese New Year, Chinese people would make all kinds of cakes or puddings for friends. I have tried a steamed coconut cake that is very popular in Hong Kong.

Honestly speaking, I like this baked one most.

So I plan to bake one in the coming New Year season. The delicious taste, fragrant smell and chewy texture will make it a hit in my family for sure.

Yakisoba (Classic Japanese Stir Fry Noodles)

I particularly like Japanese street foods. How can I miss out on Yakisoba, "fried noodle", a Classic Japanese street food? I couldn't go to Japan and enjoy it as frequently as I like, so I tried to make it at home. It's very simple and easy.

To make this dish, I need to find Japanese noodles for stir-fry. It is not difficult to find several brands in any Asian grocers here in Australia. I have tried a few brands of noodles. They are easily broken apart during or even before stir-frying. But the taste is still good as long as you don’t mind the presentation is not ideal. It's like fried noodles in chopped sizes.

Yakisoba can be a quick meal or snack. It’s really simple and easy to make this fried noodle dish. I just used the staples and seasonings that are always kept in my kitchen. For convenience, I took a different route of using Len & Perrins Worcestershire Sauce in my fridge for making the sauce.

To get an authentic taste, buy Bull-Dog sauce from a Japanese store or Asian grocers. You need to adjust the amount of juice accordingly. The yakisoba sauce is sweet, and the amount of sugar in this recipe can be adjusted to suit your taste. This is the biggest advantage of making it at home yourself.

Look, this Japanese-style fried noodles dish are topped with Japanese-style red ginger and sprinkled with seaweed powder (seaweed powder). The taste is fantastic.
