Sloppy Joe Cornbread Casserole

Portland cookbook authorJulie Hasson released"Vegan Casseroles" this year, and it had some amazing comfort dishes. Our favorite was this skillet casserole with a Sloppy Joe filling and a slightly sweet cornbread baked across the top. This is one to hold onto for college football bowl games and the Super Bowl.

The BKT (Bacon Kale Tomato) Bowl

Terry Hope Romero's"Salad Samurai" was our top new vegan cookbook this year, and this recipe shows why. From its addictive tempeh bacon to its bacon bits made out of coconut (believe it), this salad shows that greens don't have to be blah and can be pure indulgence.

Spicy Lasagna Roll-ups

This is my favorite recipe rescue of the year. The original recipe came from a 1988 recipe compendium from the folks at Reader's Digest called "Great Recipes for Good Health," which was essentially focused on eliminating any added salt to dishes, which was a healthy eating obsession at the time. Now it's updated, vegan and more flavorful.

Veggie Oat Taco Mince

Oatmeal in a taco filling? We thought it sounded crazy, too, until we tried Kathy Hester's surprising Veggie Oat Taco Mince, which combines steel-cut oats with kidney beans, minced carrots, sautéed onions, green peppers and kale.

Mediterranean Wheat Berry and Bean Salad

This healthy salad makes a great light lunch, but also could be a side dish with other Greek or Moroccan fare. You'll find wheat berries in the bulk food section of most grocery stores, but if you can't find them, you can substitute other whole grains, like faro, spelt or pearl barley.

Magic Mushroom Powder

You can find great vegan recipes in unusual places, like this homemade seasoned salt from the cookbook"Nom Nom Paleo." Yes, a Paleo diet cookbook! The blend of pulverized dried porcini mushrooms, kosher salt, dried thyme and red chile flakes is so good you'll find yourself sprinkling it over soups, roasted veggies and just about anything that can use a touch of umami.
